Rotisserie chicken purchased from your local grocery store deli is a great quick meal for those rushed weekday dinners. Buy the larger one and you'll have some leftover chicken, perfect for this chicken salad. Otherwise, just boil up some chicken cuz this is one good sandwich! I prefer this chicken salad served on white wheat or just plain ole white bread.
For a touch of nostalgia, serve the sandwiches wrapped in butcher paper or waxed paper. Simply place the sandwich on the paper with the top edge folded under. Fold the bottom up, and tuck the sides around the back of the sandwich. Helps hold in the filling and so country chic!
Deli Style Chicken SaladPosted at http://mynew30.blogspot.com/

3 eggs, peeled and chopped
1 cup celery, finely diced
1 cup of mayonnaise
1/4 cup of sweet pickle relish
1/2 teaspoon of poultry seasoning
Salt & pepper, to taste
Combine the chicken, eggs, and celery in a suitable sized bowl. Whisk together the mayonnaise, pickle relish, poultry seasoning and salt & pepper; pour over the chicken mixture and toss. Chill for several hours so flavors can meld together.

Delicious...I could go for a chicken salad sammie right about now! And YES, I laughed when I saw that we both made watermelon margaritas yesterday, too!! (it was one of those days when I couldn't get through to comment...)I bet it would be delicious to add some strawberries...which I just happen to have ;)
Mary- What a great sounding chicken salad. I think my family would really love this one. Can't wait to try it out!
I know! I laughed too... that happens a lot with food bloggers I notice. I guess we're all thinking along the same lines sometimes! Well, I tell ya, it is so hot today and I've been trying to work in the yard a bit, that another pitcher of 'em is looking real good right now!!
Oh Heidi - thanks. Hope you like it. I need to pop over and see what you're up to today!
Wow - this looks really delicious!
MMMMMM that looks SO good!I only ever make PBJ and ham and cheese, haha, so I'm SO trying that now! Thanks for the tip!
I found you via SITS by the way, your comment over there made me giggle so I had to stop by :)
Gosh that sounds good. I'll have to add this to the "grown up" chicken salad recipe you shared a few weeks ago that my family really loved!
I bought a rotisserie chicken this past week to make to make just that--chicken salad sandwiches. I ended up using it for something else so I am still hungry for chicken salad--I guess I'll just have to get another!! Thanks for the reminder. Sheila in NC
I've never met anyone who didn't like chicken salad. This looks scrumptious. Your photos are great. Have a good day.
Ive never made a chicken salad before but have always wanted to try it and I just happen to have some chicken in the fridge that needs to be used :D will be trying this one thanks so much, Carmen
Hi and welcome!
Please come back if you have time and let me know if you like it!
I love those rotisserie chickens. I almost always end up making a chicken pasta salad with leftovers. I usually enjoy it as much (or more) than the original chicken dinner! The sandwich in your picture looks like it straight out of a Woolworth's menu!
I want this. I want this so bad! And guess what? I have a boiled chicken in my fridge. I was going to make "pulled BBQ-sauced" chicken sandwiches for supper, but now..... I don't know what to do. LOL.
Thanks finsmom!
Future Mama - yep, food I can totally relate to. Hope you try it. Thanks for swinging by!!
Penniwig, this one is more of the standard stuff - I love them both tho.
Sheila, we ate all of it and I want some more already!
Thanks Mary!
Karen, chicken pasta salad sounds so good right now! I used to love Woolworths - can ya tell?? ;)
LOL Debbie - such a dilemma! I think you should make that BBQ pulled chicken thing so I can come by your place and drool over it! Then make this another day. :)
I just voted for you!!!
Thanks so much!!
