Quaker Oats Vanishing Oatmeal Raisin Cookies


2 sticks of butter, softened
1 cup firmly packed brown sugar
½ cup granulated sugar
2 eggs
1 teaspoon vanilla
1 ½ cups AP flour
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
3 cups Quaker old fashioned or quick oats, uncooked
1 cup of raisins

Preheat oven to 350 degrees.
Beat together butter, brown sugar and granulated sugar until creamy.
Whisk together the flour, baking soda, cinnamon, and salt. Add to sugar mixture.
Stir in oats and raisins, mix well.
Drop by rounded tablespoonfuls unto parchment paper covered baking sheet.
Bake 10 to 12 minutes or until golden brown.
Cool 1 minute on baking sheet; remove to wire rack.

Makes about 4 dozen.

To make into bar cookies spread in an ungreased 13 x 9 inch metal baking pan and bake 30 to 35 minutes.
