I had been given notice from the folks at Pssst… that an exciting new chef recommended ingredient was on the way to me, so I was thrilled when I opened the mystery package to discover that the folks from General Mills had sent me Progresso's new Panko Bread Crumb product to try.

I have been wanting to try panko forever, but it has been next to impossible to find around here. The place where I usually shop for groceries did not carry any type of panko product, and I kept forgetting to check the other stores where I occasionally shop.  Imagine my surprise when I opened the package to discover not only panko bread crumbs, but from a product name that I love, Progresso! I couldn't wait to try them.

Besides using the panko as a topping on my Green Bean Casserole with Panko Crumb Topping and my Broccoli & Cheese Casserole, I also decided to use some of the bone-in chicken breasts from my last Angel Food Ministries box and make Crispy Panko Coated Ranch Chicken. Nothin' could be easier than this y'all - FOUR ingredients.  Yep, that's it. Just FOUR - chicken, mayonnaise, ranch seasoning mix and Progresso Panko Bread Crumbs. The mayonnaise helps to retain the juiciness of the chicken, and the panko provides a wonderful crunch.

Wow, was this super easy! There's plenty of flavor in the ranch dressing and I absolutely LOVED the crunch from the panko - super crunchy. Panko bread crumbs are jagged edged and flaky so that they remain crisp whether they are used in frying or baking and now that they are a Progresso product, much easier to find! These will definitely be a pantry regular in my house now.

2009 Veterans Day Freebies
