This is an excellent low carb way to get barbecued chicken in your diet. It's based on the old Stillman diet, except that Stillman's uses store bought ketchup and this one is a homemade one.
I used whole, boneless, skinless chicken breasts. I mixed up the sauce earlier in the day and just kept it in the fridge. After I browned my chicken a bit, I just poured the sauce on top, brought it to a boil, reduced to a simmer, covered it and let it cook. Definitely doesn't take 45 minutes, maybe more like 30. Oh, and since I don't have the patience of Job, I removed the chicken at the end, whisked in 1/8 a teaspoon of xanthan powder with the sauce and it thickened up very nicely, and quick!
Cola Barbecue Chicken
2-3 pounds cut up boneless chicken
1 8oz can "no salt added" tomato sauce
12 oz diet cola
1/4 cup apple cider vinegar
1 tblsp chili powder
2 tsp onion powder
1/2 tsp dry mustard powder
1/2 tsp garlic powder
1/8 tsp ground cloves
1/8 tsp ground allspice
1/8 tsp ground cinammon
1/4 tsp cayenne pepper
Brown chicken in a nonstick skillet in a bit of oil, add all of the other ingredients and bring to boil. Cover, reduce heat and cook for 30 to 45 minutes. Uncover, turn up the heat and continue cooking until the sauce becomes thick and adheres to the chicken, or thicken with some xanthan powder to thicken.
